Jollof Rice is undoubtedly the most famous dish in West Africa, known for its deep red colour and spicy flavour. In this special recipe, we combine tender chicken and nutritious vegetables with the irresistible aroma of Peacock Thai Hom Mali Jasmine Rice. It is a perfect main course that brings the whole family together.

  • 1 - Prep the ingredients

    We prepare all the ingredients for the Jollof Rice with Chicken recipe. First, cook the Brussels sprouts (boil or steam them) and set them aside for later.

  • 2 - Cook the rice

    Put the Peacock Thai Hom Mali Jasmine Rice to cook in a pot with water, a pinch of salt, and pepper. Cook until tender, drain if necessary, and set aside.

  • 3 - Fry the vegetables

    Chop the onion and the peppers. Fry them in a pan with a little oil. When they start to brown, add the chopped tomatoes, salt, and the rest of the spices (thyme, cinnamon, turmeric, ginger, chilli). Let it rest and cook for a few minutes.

    Add the chicken broth (and the chicken breast cut into pieces if not already cooked) and let it simmer for 20 minutes to create a rich sauce.

  • 6 - Combine and Serve

    Drain the rice (if there is excess water) and add several ladles of the chicken and vegetable sauce to it. Mix the ingredients well. Serve the rice and chicken meat with the vegetables on top and the Brussels sprouts distributed all around the plate.
